good morning, sunshine

baked eggs & toast




















we spent last weekend in new paltz and stayed at a cute little bed & breakfast called the arbor. nancy, the owner, was incredibly accommodating and was pretty impressive in the kitchen! i took a cue from her and made my own version of her baked eggs and served it with brooklyn's own blueberry preserves. 


prep time: 10 mins
cook time: 7 mins
ingredients (2 servings):

  • 4 eggs
  • 1 tablespoon fresh chopped rosemary and thyme
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon butter
  • 2 tablespoons milk
  • salt & pepper to taste
preheat oven to broil. place the two individual dishes on a baking sheet and add 1/2 a tablespoon of butter and a tablespoon of milk to each.  broil until the mixture's started to bubble up(about 2 minutes), then pull the dishes out. crack two eggs into each, being careful not to break the yolks. on top of the eggs, layer the parmesan, then fresh herbs, then salt and pepper. return to the lower rack of the oven and cook for 6-8 minutes (depending on whether you like runny yolks, or not) and serve hot. try blueberry preserves from anarchy in a jar. lots of other fun and jamtastic flavors available too!
